Backyard Bunnies. No,
it’s not the name of a children’s book (but maybe I should write one?)
When we moved into our home last spring, I found 3 bunnies in our
backyard that were the cutest little things! I named them all –
Daffodil, Daisy, and Thumper (not that I can tell them apart, but it
was a cute idea). I chased them all spring and summer but was NEVER
able to catch one…not even the little baby bunny I saw. I want to pet
them SO bad but they are just too fast! I have missed seeing them
during the winter, and was so excited when I looked out the window this
week to find one hopping into the flower bed, and two more chasing each
other in circles around the lilac bush. The bunnies are back!!! Maybe I
can catch one this year….
Michelle McBeath. That’s
the name of the sweet friend who came to visit PoHo this week, and let
me tell you, she is PRECIOUS! Michelle is the first person Rusty met in
2007 when visiting the World Race. I met her on the front steps of
Swaziland a few months later when she joined the group to pray healing
over me (and it worked!) She’s one of those people you just LOVE
instantly – she is warm, kind, funny, and so sweet she’ll give you a
toothache. It was great to see her this week, even if it was only for
an afternoon. Michelle, please come back soon! ๐
Family dinner. Thursday
night is Family Dinner night here in PoHo. We try to have one every
week, unless a ton of people are out of town. It’s a tradition I’ve
grown to LOVE! We all get together, usually at Michael & Kathy’s
house and eat, talk, and laugh a LOT. I think we may have laughed more
than ever last night! There was laughter when we got there, laughter
during dinner, and BOY was there laughter after! The girls were all
trying to clean up the kitchen, when Kim found Kathy’s new sponge that
had a BUTTON on the side. Well, she got a little excited and, um,
trigger happy and pushed the button all the way inside. Soap went
EVERYWHERE! The next 15 minutes was spent laughing hysterically, going
through drawers to find random ‘tools’, and Kim trying to get the
button back out of the sponge handle (while we all cheered her on).
After using a spoon handle, paperclip, tiny serving fork, and surgical
scissors KIM FINALLY GOT IT! Kathy captured our excitement in the
picture below…
Cardboard Testimonies.
If you’ve never heard of this before, then PLEASE check out the video
below! It’s been done at several churches, and our church did it on
Easter Sunday. Pastor Mark shared about who Jesus Is
and how He is still alive and still redeeming lives today. Then a bunch
of our church members got up to share their stories through these
Cardboard Testimonies. It was SO powerful! Rusty and I were blessed to
be a part of this experience (you’ll see us in the video):
56 fruit tarts. That’s
how many fruit tarts I made three weeks ago. I made another 28 last week,
and I have a third batch I am making today! If you’re wondering
what ‘fruit tarts’ are, they’re a little something new I tried last year. I LOVE Fruit Pizza, but it’s hard to take places and messy to
eat. So I did a little ‘tweaking’ of the recipe for an event last year
to make Fruit Tarts instead, and ever since then people BEG me to bring
them EVERYWHERE I go!
I’ve had several people ask me for the
recipe lately, so I thought I’d share it on this blog. It’s a perfect
recipe for the spring & summer… and I even like to pretend it’s
healthy (I mean, it has FRUIT on it! ๐ Hope you enjoy it!
1 container (7-8 oz) of whipped cream cheese
1 container (7-8 oz) of marshmallow cream
Fruit of choice (I use strawberries, green grapes, and blueberries)
Muffin papers (I like the silver ones)
oven to 350 degrees. Slice sugar cookie dough into approx. 1/4 inch
thick rounds. Place a slice in the bottom of each muffin paper (put the
paper into a muffin tin to bake). Bake the cookie dough 8-10 minutes
(you want it to be slightly golden on the edges but not brown). Remove
the muffin tin and “drop it” immediately on the counter/stove (give it a little hit
– when you do this the cookie dough which has been rising will fall
into a little ‘cup’).
Let the cookie cups cool completely. Mix
together the whipped cream cheese and the marshmallow cream. Spoon this
topping into each cookie cup (I use two spoons to make this process
easier b/c it’s so sticky – scoop with one spoon, then push it out of
the spoon and into the cookie cup with another). Slice your
strawberries and grapes, then add them and the blueberries (or your
fruit of choice) to the top of each cookie cup. *Tips: Be sure to refrigerate
these before serving – they have cream cheese on them so they can only
be left out for an hour or two. Remember to choose fruit that won’t turn brown (apples aren’t a good topping for these). It is best to make these the day of your event. They are still yummy for a day or two in the refrigerator, but with each day they get more soggy because the topping soaks into the cookie cup.
